Turkey Stuffed Portobello

INGREDIENTS:

4 Portobello mushrooms – washed, stems and gills removed (around 85g each)

1 lb ground lean turkey meat

1 medium onion diced

2 garlic cloves minced

1  medium red bell pepper diced

2 cups spinach

1/2 cup shredded cheese

1 tbsp olive oil

salt & pepper to taste

COOK:

Preheat oven to 400F. Saute onions and garlic. Add ground turkey, salt & pepper. Cook stirring frequently until most of the pink is gone around 6-8 minutes. Add vegetables and continue cooking for 3-4 minutes. Place mushrooms on baking sheet. Fill caps with cooked meat & veggies and top with shredded cheese. Bake for 20 minutes until cheese is melted and it is beginning to brown. Enjoy!

Approximately 250 calories for each stuffed mushroom with cheese:

Protein 34g, Carbs 10g, Fat 9g,

Without the cheese:

Calories 195; Protein 30g, Carbs 9g, Fat 5g
